Depending on the time of year it’s harvested, honey can have varying shades of color. It all depends on what’s blooming and what the bees forage on.

Real honey crystallizes!

Raw and unfiltered honey will often change to a solid appearance over time – sometimes a short time!

It may look hard and crunchy.

It may have turned completely solid.

No worries.

It’s good and you know you have REAL HONEY, not some honey-flavored fructose in a cute little bear bottle.

While honey doesn’t expire, it will eventually take on a different look and shape. This shape-changing process, called crystallization, is completely natural.

REAL HONEY CRYSTALLIZES

When your honey crystallizes, it means that it is a real, natural honey product . Crystallization occurs because of the natural qualities inside.

The natural sugars in honey (glucose and fructose) will join and begin to form little crystals, which can start making the honey harder. Some honey will begin to crystallize faster than other types. At Dedko’s, we provide delicious, top-quality honey—stressing quality over appearance. We also don’t extend shelf life by adding in things or filtering natural things out to slow down the crystallization process. We simply keep it natural.

The pollen in honey also contributes to this crystallization process. The bits of pollen remaining provide a platform for the crystals to begin forming. Pollen is important and is abundant in pure honey. Some may consider it as having less visual appeal because the honey looks solid, but not excessively filtering-out the pollen means maintaining the real product made by the honey bees.

KEEPING IT CRUNCHY

Crystallized honey is just a different form of honey! It’s perfectly edible and doesn’t mean that the honey has spoiled. It means that the honey is natural. Many Many people love the hard, crystallized honey and its complex texture. Spread it on breakfast toast, biscuit or bagel and enjoy the sweetness of honey without the drip. It can also be added into oatmeal, salads and sandwiches or anywhere you want a big bite-full of honey sweetness.

You can still eat and cook with crystallized honey exactly as you would use liquid honey. It will melt into hot drinks and into baked dishes, just like liquid honey.

If you prefer not to change the traditional way consuming honey and want to keep the honey dripping, simply give it a hot-water bath. Boil some water, then remove it from the heat.  Take a large bowl, fill it with the warm-hot water and let the honey container sit in the bath until the crystals melt.

When honey becomes solid or a bit crunchy, know that it hasn’t been processed or overheated in the packaging process. Real honey undergoes natural processes like crystallization, but the honey remains 100% pure and natural!
