REAL honey will crystallize!

Raw and minimally filtered honey will often change to a solid appearance over time – sometimes a short time!

It may look hard and crunchy.

It may have turned completely solid.

No worries.

It is perfectly fine, and it is REAL HONEY, not some chemically altered, honey-flavored fructose.

While honey doesn’t have an expiration date, it will eventually take on a different look and shape. This shape-changing process, called crystallization, is completely natural.

REAL HONEY CRYSTALLIZES

When the honey crystallizes, it means that it is a real, natural honey product. Crystallization occurs because of the natural qualities which make up the honey.

Since honey is composed mostly of the two natural sugars (glucose and fructose), it will eventually begin to change in appearance.  The sugar molecules begin to form little crystals, which makes the honey turn to a more solid form. Some varieties of honey will begin to crystallize faster than others.

We do not repeatedly filter the honey, but leave pollen grains and wax bits, which also add to the nutritional value.  The pollen in honey contributes to the crystallization process. Pollen is important and is abundant in pure honey. The bits of pollen remaining provide a platform for the crystals to begin forming. Some may consider the honey to have less visual appeal because it looks solid, but not excessively filtering-out the pollen helps to maintain the authentic product made by the honey bees.

We provide delicious, locally produced honey—and stress natural quality over appearance. We also don’t attempt to extend “shelf life” by adding preservatives or filtering natural things out to slow down the crystallization process. It has come from the hive just as the bees made it.

KEEPING IT CRUNCHY

Crystallized honey is just a different form of honey! It’s perfectly edible and shows that the honey is natural. Many, many people enjoy the hard, crystallized honey and its complex texture. Spread it on breakfast toast, biscuit or bagel and enjoy the sweetness of honey without the drip. It can also be added into oatmeal, salads, cheese, and crackers, paired with your favorite fruit and sandwiches or anywhere you want a big bite-full of honey sweetness.

You eat and cook with crystallized honey just as you would use liquid honey. It will melt into hot drinks and into baked dishes, just like liquid honey.

 

Still PREFER TO DRIZZLE?……

If you prefer the traditional way of eating honey and want to keep the honey flowing, simply give it a “hot-water bath”. Boil enough water to fill a large bowl, then remove it from the heat.  Fill the bowl with the warm-hot water and let the container of honey sit in the bath until the crystals have melted. It is then ready to drizzle.

When honey becomes solid or a bit crunchy, know that it hasn’t been overly processed or overheated in the extraction and packaging process. Real honey undergoes the natural process of crystallization, but remains 100% pure and natural!
